08/06/2009 The Countdown Begins….. September 13th Update…Nick Stellino, Maurice Lacroix and Macari Wines!!!

The countdown has begun for the big event. 38 Days until September 13th,…Nick Stellino, Maurice Lacroix and Macari Wines all together at Maddaloni Jewelers. Join the fun, Here is Nick’s latest recipe, Happy Grilling.

 

JASPER’S TOMATO, GRILLED ASPARAGUS AND BLUE CHEESE SALAD WITH GRILLED CHICKEN                recipes_cf_grilled-asparagus-and-blue-cheese-salad-with-grilled-chicken


SERVES 4

Coat the chicken breasts with the extra light olive oil and season with cracked black pepper and kosher salt. Grill on a charcoal grill or in a grill pan until the chicken is cooked through, approximately 5 to 7 minutes per side, depending on thickness. Remove the chicken breasts from the heat and slice each into 6 to 8 pieces.

To prepare the grilled asparagus:
Marinate the asparagus in the extra virgin olive oil and season with cracked black pepper and kosher salt. Grill over an open flame for 1 to 2 minutes. Remove from the heat and serve warm.

To prepare the roast shallot-black pepper vinaigrette:
Cut off the top of the head of garlic and peel the shallots. To roast the garlic and shallots, brush with extra virgin olive oil and place in a baking dish in an oven preheated to 375 degrees. Roast until soft, approximately 35 to 40 minutes

In a medium bowl, mix ½ cup extra virgin olive oil and both vinegars. After the garlic and shallots cool, squeeze the garlic cloves out of their skins, and chop and mash them into a paste together with the shallots. Add the garlic-and-shallots paste to the rest of the ingredients, mix, and season with kosher salt. 

To serve:
On each plate lay out the tomato slices with the grilled asparagus in a nice arrangement. Arrange the slices of chicken breast on the plate next to the tomatoes. Sprinkle the Maytag blue cheese over the top of the salad, and garnish with the red-onion rings and basil. Drizzle 2 ounces of the vinaigrette over each salad

GRILLED SALAD WITH GOAT CHEESE Chef Nick Stellino SERVES 4 TO 6 

 

Brush the radicchio, endive and peppers with 4 tablespoons olive oil. Cook on a hot barbecue or under the broiler for 2 to 3 minutes per side, until they start to color on each side. Place on a cutting board while still hot and cut into 1-inch pieces. Place the arugula salad and the goat cheese in a bowl with the radicchio, endive and peppers, and mix well until the cheese starts to melt. Add the remaining 2 tablespoons olive oil and the balsamic vinegar, mix well, and serve.

Diamond Engagement Trends…

Knowledge of the four c’s is the starting point, detail from the origin of the stone to the culet opening are determinate factors in the purchase. Not only are consumers learning about diamonds, metals are being discussed as well. White platinum, which is the more in style but expensive choice in metal for engagement rings, can now be replaced by alternative metals, which are a fraction of its cost. White gold can replace white platinum and are about 40 percent lower in terms of cost. Palladium, which is a metal that is similar to platinum can also be used and is priced about 70% lower than platinum.

How the diamond is set on the ring is also changing in 2009. More and more people are shying away from the pronged setting and are choosing more engagement rings that have diamonds that are set in a semi-bezel way into the ring band. The semi-bezel setting will give added hold to the diamond to prevent its loss brought about by an active lifestyle. Another recession-friendly trend is the use of the tension setting to hold the diamond in place. Tension settings have been in existence since the mid 1900s but the technique has greatly improved so that it holds the diamond more securely than the traditional pronged setting. Tension setting also allows more light to pass through the diamond making the engagement ring produce more sparkle.

Timepiece Maintenance…..A Must

All fine timepieces require routine maintenance and servicing. Most overhauls last 3 to 4 years simply due to the longevity of the oils used for lubrication inside the movement. When the oil lubricants begin to dry up the moving parts of the mechanisms begin to produce friction, which cause the parts to break, affecting the accuracy of the watch.

If your mechanical watch is running more than 2 to 3 minutes fast or slow it may be time for an overhaul.

make sure your watchmaker:

Ø  Completely disassembles the watch in order to clean, oil, and time, using state of the art equipment.

Ø  Cleans all moving parts with specialized cleaning solvents.

Ø  Properly lubricates with only the highest-grade lubricants and oils .

Ø  Tests for accuracy. Your watch should be tested with perfect timing over a   period of 72 hours to assure accuracy, water resistance, and proper operation of all functionality.
